Salsa Number Two

Ingredients

  • 9 c tomatoes – skinned, cored and chopped
  • 2 1/2 c green peppers – chopped
  • 1/4 c jalapeños – remove seeds and ribs – chopped
  • 2 1/2 c white onion – chopped
  • 8 cloves garlic – minced
  • 12 oz can tomato paste
  • 1 c white vinegar
  • 1 t ground cumin
  • 6 t salt
  • 1 t pepper
  • 2 t oregano
  • 1/2 t cayenne pepper

Instructions

  1. Combine the ingredients into a heavy bottom stock pot
  2. Bring to a boil and reduce to simmer for 30 minutes
  3. Ladle into clean pint jars for processing (water bath 20 minutes)
