Happy Thanksgiving

Note**** I want to apologize in advance for any badly spaced words. Myspace bar is only working about a third of the time so I have to remember to go back in and make spaces between words (i.e. “I haveto go back inand makespace betweenwords”).

Turkey Gravy

• All of the bones simmered the the stock most of the night (a little insomnia at 3:30 led to some stock straining). After time to let the fat separate, it’s back in a pot this morning reducing down to a nice, thick glaze.
