Ingredients
- 1/3 c sugar
- 1/2 t cinnamon
- 1/4 t ground cardamon
- 1/2 t fresh lemon zest
- 1/2 t vanilla
- 1/4 t salt
- 3 eggs
- 2/3 c AP flour (I used up some Popover Mix)
- 2/3 c milk
- 3 T butter
- 2 apples – peeled, cored and thinly sliced
Instructions
- Preheat a large cast iron skillet to 425°F in the oven.
- In a blender, combine sugar, cinnamon, lemon zest, vanilla, salt, four, milk and eggs until frothy.
- Melt 3 T butter in the preheated skillet.
- Arrange the sliced apples in the bottom of pan and carefully pour batter over apples.
- Put the skillet into the oven and bake 18 to 22 minutes – until pancake is golden-brown and puffy.
- Dust with powdered sugar and serve immediately.
