German Apple Pancake

Ingredients

  • 1/3 c sugar
  • 1/2 t cinnamon
  • 1/4 t ground cardamon
  • 1/2 t fresh lemon zest
  • 1/2 t vanilla
  • 1/4 t salt
  • 3 eggs
  • 2/3 c AP flour (I used up some Popover Mix)
  • 2/3 c milk
  • 3 T butter
  • 2 apples – peeled, cored and thinly sliced

Instructions

  1. Preheat a large cast iron skillet to 425°F in the oven.
  2. In a blender, combine sugar, cinnamon, lemon zest, vanilla, salt, four, milk and eggs until frothy.
  3. Melt 3 T butter in the preheated skillet.
  4. Arrange the sliced apples in the bottom of pan and carefully pour batter over apples.
  5. Put the skillet into the oven and bake 18 to 22 minutes – until pancake is golden-brown and puffy.
  6. Dust with powdered sugar and serve immediately.
