Bread and Butter Pickles

Ingredients

  • 2 3/4 c pickling cucumbers – sliced into 1/2″ chunks
  • 3/4 T salt
  • 1/2 medium white onion – thinly sliced
  • 1/2 c white vinegar
  • 1/4 c cider vinegar
  • 1/2 c granulated sugar
  • 1/8 c brown sugar
  • 3/4 t mustard seed per jar
  • 1/4 t celery seed per jar
  • 1/16 t turmeric powder per jar

Instructions

  1. Sprinkle the cucumbers and onions with salt and allow to sit for 45 minutes
  2. Rinse the cucumbers and onions – allow them to drain well
  3. Combine the vinegars and sugars in a saucepan and lightly boil until the sugars dissolve
  4. Pack the cucumbers and onions into jars, add the seeds and turmeric and cover with the hot pickling liquid.
  5. Process in a hot water bath for 15 minutes
